I have always love broccoli since I was a little child. I didn’t know what they were called then and I remembered telling my mom I want that tree vegetable, well because it looked like and still to this day look like a tree to me, trunks and all.
You will be surprised how many times I burn broccoli before understanding my mistakes. Here comes a confession: I don’t enjoy making stir fries or any quick-cooking food. I get too stressed out. The whole time I feel like I am racing against time so I don’t have a plate of unappetizing burnt bok choy at the end. I like braising asado or making stews or slow-cooked bolognese. A recipe that calls for many ingredients or many steps doesn’t faze me, but stir frying vegetables? Thanks but no thanks.
In the restaurants, they blanch the vegetables before frying, but honestly who has the time? So here is my trick. Turn on the fire to medium and add oil. Add the broccoli and coat them with oil. Add about 1/3 cup of water and cover with lid. Basically you are creating some steam action here so the broccoli cooks without drying out. Cook for about 5 minutes, open the lid and gently stir fry the broccoli for another 2 minutes and you are done.
